Chicken Gyros with Tzatziki Sauce

Chicken GyrosNo matter how you pronounce gyros they are delicious. They are spicy, flavorful, and so yummy. This is the kind of food you wait in long lines for at a fair or at a festival. And now you don’t have to wait in a long line for them, because you have the recipe to make them at home whenever you want.  That’s right!  You can enjoy gyros all year long!  Even though it is fall you can feel like you are transported back to summer with this delicious dish.  I love this recipe with its wonderful cucumber sauce. I ate it for three lunches straight!  These gyros come together so quickly and they are completely family friendly. If you’re not a tomato fan, skip them.  If you love feta cheese, load it on.  Looking for a great Halloween dinner?  Try this meal idea out.  You can make gyros before the trick-or-treaters start coming by, and you can enjoy the gyros while you are handing out candy.

Start by making your Tzatziki sauce. You will need 1/2 of a cucumber, 1 (7 oz.) container of plain Fage greek strained yogurt, 1/2 teaspoon of garlic powder, 1 teaspoon of dried dill, 1/2 teaspoon of lemon juice, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper.

peeling cucumberChop half of the cucumber into fine pieces.

Mix the cucumber, yogurt, garlic powder, dried dill, lemon juice, salt, and black pepper.

mixing sauceNow you can set your Tzatziki sauce aside and mix up the spices for your chicken.  In a bowl mix 1/2 teaspoon of salt, 1/2 teaspoons of paprika, 1/2 teaspoon of black pepper, 2 teaspoons of dried parsley, 1 teaspoon of garlic powder, and 2 teaspoons of oregano.

spices mixed for gyroNext pound your chicken to a 1/2 inch thickness between two pieces of wax paper.

pounding chicken for gyrosThen cut the chicken into strips and season with the seasoning that you just mixed up.  Then put it in a pan and cook it with 2 tablespoons of olive oil until it is no linger pink and has a temperature of 165 degrees.

cooking chicken for gyrosNow it is time to put your gyros together with your condiments. You need flat bread, lettuce, onions, tomatoes, feta cheese, and the Tzatziki sauce.

condiments for gyrosHeat your flatbread according to the package directions and pile on your favorites. Wrap the bottom in foil to make it easier to hold. Now close your eyes and you will be transported back to summer with this delicious dish. Enjoy!!

Chicken Gyros with Tzatziki Sauce

Ingredients

  • Chicken and Seasoning
  • -------------------------------------------------------
  • 2 lbs. boneless skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • 1/2 teaspoon pepper
  • 2 teaspoons dried parsley
  • 1 teaspoon garlic powder
  • 2 teaspoons oregano
  • 2 tablespoons of olive oil (use to cook chicken)
  • -------------------------------------------------------
  • Tzatziki Sauce
  • ----------------------
  • 1/2 cucumber peeled and finely diced
  • 1 (7 oz.) container of plain Fage greek strained yogurt
  • 1/2 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • -------------------------------------------------------
  • For Serving
  • --------------------
  • 4-6 Greek flatbreads
  • lettuce
  • tomato (diced)
  • onion (sliced)
  • feta cheese

Instructions

  1. Start by making your Tzatziki sauce. You will need 1/2 of a cucumber, 1 (7 oz.) container of plain Fage greek strained yogurt, 1/2 teaspoon of garlic powder, 1 teaspoon of dried dill, 1/2 teaspoon of lemon juice, 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper. Pumpkin Bars with Buttercream Frosting

Pumpkin BarsIt’s October which means falling leaves, Halloween, and yes pumpkins.  My favorite recipe that includes pumpkin is Pumpkin Bars with Buttercream Frosting. This is a recipe that my mom has made for many years and it is always one of my favorites. It is frosted with buttercream frosting instead of the traditional cream cheese frosting because my sister is not a cream cheese fan. I think it tastes better with the buttercream, and it’s a great way to go since you don’t have to refrigerate them.  If you’re looking to amaze your friends and family with a delicious desert, look no further.  These pumpkin bars are fluffy and moist.  My husband just ate the last three pumpkin bars and he agrees you will get many requests for this recipe if you share it with your friends.

So let’s get started. First you need to pour 2 cups of sugar into a bowl.

Next mix in four eggs.eggs for pumpkin bars Then slowly add 2 cups of flour.

flour for pumpkin barsNext mix in the 2 teaspoons of baking powder, 1 teaspoon of soda, 1/2 teaspoon of salt, 2 teaspoons of cinnamon, 1/2 teaspoon of ginger, 1/2 teaspoon of cloves, and 1/2 teaspoon of nutmeg.

spices for pumpkin barsMix it all thoroughly. Grease a 10×15 inch jelly roll pan or other shallow baking pan.

just out of the oven barsNow you can let the bars cool and make your buttercream frosting. In a mixer blend 1/3 cup of softened butter, 1 lb. of powdered sugar, 1/4 cup of milk, 1 tsp. of vanilla and 1/4 tsp. of salt until smooth. You may have to add a little more powdered sugar if the frosting is a little too runny or a little milk if it is a little too thick.

Notes
Buttercream Frosting

1 lb. (or 3¾ cups) powdered sugar
1/3 cup softened butter
1/4 cup of milk
1 teaspoon vanilla
1/4 teaspoon salt

Just in time for your Halloween party.  All you have to do to make these toppers is print them out on card stock, cut them out and glue two circles together with a toothpick sandwiched in the middle. It is so easy. You can also use them as Halloween gift bag tags. For the cupcakes I used my Chocolate Cake Recipe. Adjust the cooking time to 30 minutes, because they are in cupcake liners instead of cake pans.

Apple Turnovers

apple turnoversAre you looking for the perfect breakfast pastry? Well here it is with all of it is flaky apple deliciousness. This apple turnover is so good your kids will want to get up early to eat breakfast. Put away the Pop Tarts.  Forget about the Toaster Strudels. It’s time to get out the fresh apples and spices that will have your kids running for the dinning room table. Kids love the sweet, cinnamon goodness.  And guess what…it’s easy to make. Odds are you will have most of the ingredients in your pantry. So let’s get baking.

Start by chopping your 2 cups of apples into small pieces.

adding flourNext add 1/2 teaspoon of cinnamon.

adding cinnamon 1/8 teaspoon of nutmeg.

mixing applesNow open two 8 oz. packages of crescent rolls. Separate each triangle on a foil lined baking sheet and put two tablespoons of filling in the center of each crescent roll.

closing turnoversBake in a 350 degree oven for 20 minutes.

baked turnoversNow for the frosting… combine the margarine, milk and vanilla in a pan on the stove and heat it until the margarine is melted. You want to heat up the liquid so you will have a smoother frosting.
