Banana Muffins with Streusel Topping

brown bananasLast year I was complaining about this same issue when I made Banana Bars.  So this is an ongoing problem at my house.  But when you have a recipe this good it’s not really a problem.   This muffin is so moist and light with just the right amount of crumb topping to complement the banana taste.  You will find yourself letting a few bananas brown just to make this recipe.

Banana Muffins 3And with Easter quickly approaching you may want to make this muffin for your Easter brunch.  So let’s embrace the brown bananas and get started on this wonderful muffin recipe. 

Banana Muffins 2Start by preheating your oven to 350 degrees. Then mix the 3/4 cup of flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt in a bowl.

smashed bananaThen in a bowl mix the 2 smashed bananas, 1/2 cup of sugar, 1 egg, and 3 tablespoons of melted butter.

adding sugarSlowly mix the banana mixture into the flour mixture stirring until everything is combined.

mixing in flourSpoon the batter into a greased muffin pan equally.  This recipe makes 6 full-sized muffins.

batter in panNow you need to make the streusel topping.  Start by combining 1 tablespoon of flour, 1/4 teaspoon of cinnamon, and 3 tablespoons of brown sugar.  Then cut in 1 tablespoon of slightly softened butter.

Instructions

Grandma Dow’s Homemade Rolls

Grandma Dow's Homemade rollsThese are the best dinner rolls that I have ever had!  That’s what my niece said when she ate five of these rolls last Friday for an after school snack.  I asked her how she would describe the roll.  She said awesome, moist, and the best in the world!  Her description didn’t surprise me since this is another recipe from my Grandma Dow who was a wonderful baker, and cook.  This recipe is made with the same ingredients as Grandma Dow’s Cinnamon Rolls.  You just leave out the cinnamon and sugar. Looking to amaze your guests on Thanksgiving? Then this is the recipe for you.

To start, mix the following ingredients to create the yeast mixture in a bowl: 1/2 cup warm water (temp. the water to 100-110 degrees), 1 tablespoon of sugar, and 2 tablespoons of yeast (or two packages). Stir it in the bowl until just mixed and then let it sit for 10 minutes. It will foam up quite a bit. The reason you check the temperature of the water is to make sure that it is not too warm so it does not kill the yeast, but that it is warm enough to activate it.

yeastNext, on the stovetop in a saucepan you can make your butter mixture.  You warm 2 cups of milk, 1/2 cup of softened butter, 1/2 cup of sugar (with it heaping in the cup) and 1 teaspoon of salt.  Heat the mixture until warm about 100-110 degrees.

butter mixtureAfter your yeast mixture has sat for 10 min (it will be foamed up) and your butter mixture is warm, stir the two together in a mixer with dough hooks.

butter and yeast mixture Now beat two eggs in a bowl and pour them in your mixer and mix until combined.

eggNow it is time to add the flour to your mixture. Slowly add 8 cups of flour, mixing as you add the flour.

adding flourAfter the dough is throughly mixed, put it into a large butter greased bowl and flip the dough around so the butter gets on all the sides of the dough. 

dough ready for first riseCover the bowl with a clean dish cloth and put the bowl with dough in it in a warm spot in your kitchen and let it rise for 1 hour or more. After the hour has passed, the dough will have rose up in the bowl like this. 

dough 2Knock the dough down. That means use your hands and hit the air out of the dough.  

knock downSprinkle some flour on your counter and set the dough on the counter. Then you can start forming the rolls with your hand. Roll the dough into 1 1/2 inch size balls and set them on a greased cookie sheet to rise.

rolling doughLet the dough rise one hour or more in a warm spot until the rolls are light. They will look like this.

dough after second riseBake the rolls in an oven preheated to 375 degrees for 10-12 minutes. When the rolls are done, they will be golden brown.

cooked doughWhen I made this recipe, it made 48 rolls, but if you make your rolls a little bigger it will make a few less. Now you are ready to impress your family and friends with your homemade rolls.  If you have a few leftover, you can always freeze them and heat them up later. Enjoy!

Fresh Apple Bread

I have the perfect recipe for you, Fresh Apple Bread.  This is an easy recipe that only requires 3-4 apples. I love how this bread fills my house with a wonderful cinnamon scent.  It is almost worth baking it just for that cozy scent it creates in my home.  But that’s not all this bread has going for it.  It also has a wonderful cinnamon and spice flavor that makes it great to have with your morning coffee and with your kids for an afternoon snack when they get home from school. My daughter and nieces gobbled it up yesterday afternoon. They loved the airy texture and apple chucks. Serve it with some butter or whipped cream and you have a crowd pleasing recipe. So let’s get started.

Start by creaming your softened margarine and sugar together.

butter and sugarChop up your apples into fine pieces. This recipe calls for 2 cups of apples, which is about 3-4 apples depending on the size of the apples.

Add the vanilla and buttermilk.

Glazed Blueberry Muffins

Looking to wow mom on Mother’s Day?  One way to do that is with this muffin you can serve to her for breakfast or brunch on Mother’s Day!  It’s packed with fresh blueberries and it has a sweet glaze that’s going to put a smile on your mom’s face.  And attached at the end of this post is a free printable Mother’s Day gift tag.  You can attach the tag to a special gift or a basket of muffins.

To make these muffins, you need to mix the dry ingredients first: mix the 1 3/4 cups of flour, the 1/3 cup sugar, the 2 teaspoons of baking powder, and 1/4 teaspoon salt.  Once you are done mixing the dry ingredients, make a hole in the middle for the egg, milk, and oil.

In a bowl combine your beaten egg, 3/4 cup milk, and 1/4 cup oil.  Now pour these ingredients into the center of the dry ingredients.

Now mix just until all ingredients are moistened.  You don’t want to over mix your muffins. The batter should be lumpy. If you over mix the batter your muffins will be dense and tough.

bluberry-bowl-4-wLightly grease your muffin pan or line with paper cups.  Fill each muffin cup 2/3 full.  It will make 10-12 muffins.  My batch made 10 muffins.

blueberry-5-wBake in a 400 degree oven for 20 minutes or until they are golden brown.  Now glaze the muffins with a frosting to add that special touch for Mother’s Day. 

You can make the same frosting I used on my Cherry Bars, Powdered Sugar Frosting. Combine the margarine, milk, and vanilla in a pan on the stove and heat it until the margarine is melted.  Then in a bowl place 2 cups of powdered sugar and add the warm liquid ingredients that you just heated on the stove to the powdered sugar one teaspoon at a time. This recipe makes a lot of frosting so you may have some left over.
