Scalloped Corn

Scalloped Corn 1Today I’m featuring an old-fashioned side dish that will take you down memory lane and become an instant favorite at your holiday table. It’s quick and easy to make, because it features just a handful of ingredients. My family always has a cream style corn recipe on our holiday table whether it is Creamed Corn Cornbread or Scalloped Corn.  They are both great choices and everyone has their favorite. This recipe is simple and topped with the richness of hand buttered saltines.  So if you need a quick side dish for Thanksgiving, look no further than this Scalloped Corn recipe.

Scalloped corn 2For this recipe you will need 2 (14.75) ounce cans of cream style corn, 1 cup of milk, 1 well-beaten egg, 35 crushed saltine crackers, 2 tablespoons dried minced onion, 1/2 teaspoon of salt, 1/4 teaspoon of pepper, and 20 crushed and buttered saltine crackers for the top.

Mix two cans of cream style corn with the milk and then stir in one well beaten egg.

Scalloped Corn

Ingredients

  • 2 (14.75 ounce) cans of cream style corn

  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 20 buttered saltine crackers crushed into crumbs for the top

Instructions

  1. Mix two cans of cream style corn with the milk and then stir in one well beaten egg.
  2. Next crush 35 saltines in a bag into fine pieces.
  3. Pour the crackers into the corn.
  4. Now add 2 tablespoons of dried minced onion, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper to the corn mixture.
  5. Butter 20 saltine crackers. Crush the saltines in a bag.
  6. Pour the corn mixture in a greased 8 inch baking dish and top with the buttered crackers.
  7. Bake in a 350 degree oven for 1 hour.

Garlic Mashed Potato Casserole

Well look no further, I have that perfect creamy, garlicky mashed potato recipe for you to take.  Let’s just say having potatoes topped with bacon alone will get you cheers from everyone at the party!  Everyone including my husband. He loves bacon!  Anytime I include it in a recipe he is excited.  He was happy when I made Easy Baked Beans with Bacon, Twice Baked Potatoes with Bacon, and Bacon-Wrapped Beef Filets. This recipe has the perfect blend of bacon, garlic, mashed potatoes, and cheese that will make you the culinary hero at any party.  So get out your potatoes and let’s start cooking..

close up of casseroleFirst prepare the 8 slices of bacon in the microwave or the oven according to the package directions. When bacon is cooked set it aside. Then peel and quarter 5 lbs. (around 11 potatoes) of potatoes and place them in a pot and fill it with water so it just covers the potatoes. Now let the potatoes come to a boil and boil them for 20 minutes.

adding milkNext sprinkle in 2 teaspoons of dried parsley and 1/2 teaspoon of garlic powder. Now mix the potatoes until they are smooth and everything is combined.

  • 1/2 teaspoon of garlic powder
  • 1 cup of shredded Cheddar Cheese

Corn on the Cob with Chive and Garlic Butter

chive and garlic butter 1It’s sweet corn season here in Iowa, and boy have I been eating my share of corn.  My sister and her husband grew a small patch of sweet corn on their farm leaving us with an incredible amount to eat and freeze.  Last week we had sweet corn for supper two times and we froze bags of sweet corn all day on Friday.  After having sweet corn so many times last week, I decided to find a way to spice it up. 

chive and garlic butter 5Knowing that I have a wonderful chive plant by my back door I thought I would combine its light flavor with the buttery corn for a perfect combination.  I decided to include garlic salt to add just a splash of garlic buttery flavor needed to excite my taste buds.  This butter is amazing on corn as well as bread, shrimp, and fish.

So let’s get started!  The first thing you need to do is let the 1 stick of butter (1/2 of a cup) set out until it’s softened.

softened butterNow finely chop 2 tablespoons of fresh chives.

Then add 1/4 tablespoon of garlic powder and 1/4 of a teaspoon of salt.

Now set the butter to the side and cook your sweet corn.  In a pot of boiling salted water cook the corn until tender for 6 to 8 minutes. Then drain and serve with butter.

Corn on the Cob with Chive and Garlic Butter

Ingredients

  • 6 ears of corn, husks and silk removed
  • 1/2 cup of softened butter
  • 2 tablespoons of fresh chives finely minced
  • 1/4 teaspoon of garlic powder
  • 1/4 teaspoon of salt

Instructions

  1. The first thing you need to do is let the 1 stick of butter (1/2 of a cup) set out until it's softened.
  2. Now finely chop 2 tablespoons of fresh chives.
  3. Mix the chives into the softened butter.
  4. Then add 1/4 tablespoon of garlic powder and 1/4 of a teaspoon of salt.
  5. Now set the butter to the side and cook your sweet corn. In a pot of boiling salted water cook the corn until tender for 6 to 8 minutes. Then drain and serve with butter.

Ham and Dill Pasta Salad

pasta 4Today’s recipe is an easy pasta dish loaded with fresh tomatoes and dill.  It’s late July, which means you are going to start seeing ripe tomatoes in your garden.  And now all you need are some great recipes to use them up.  This is the perfect recipe for you to showcase your garden favorites.  And if you love dill, you are going to love this recipe’s incredibly creamy dill dressing.  Attention dill lovers: This will become your favorite summer picnic recipe.

pasta 6This dish is very easy to make.  Overall it’s about a 30 minute project with a delicious reward.  The first thing you will need to do is boil 3 cups of Rotini pasta according to the package directions.

boiling pastaDrain the pasta and let it cool. Now set the pasta to the side and chop up the 1 1/2 cups of tomatoes, then chop the 1 cup of ham, and chop 1/4 of a cup of onions.

tomaoteshamMix the tomatoes, ham, onions, and 1 cup of frozen peas in with the pasta.  Then chop 3 tablespoons of fresh dill and set it to the side.

chopped dillNow whisk the dressing together. Take 1 cup of buttermilk and whisk it in a 1/2 cup of mayonnaise.  Then whisk in the chopped dill, 1/2 teaspoon of garlic salt and 1 tablespoon of distilled white vinegar.

mixed pastaNow refrigerate until ready to serve.  You can always lighten the recipe up by using low-fat mayonnaise.

  • 1/2 cup of mayonnaise
  • 1/2 teaspoon of garlic salt
  • 1 tablespoon of distilled white vinegar

Instructions

  1. The first thing you will need to do is boil 3 cups of Rotini pasta according to the package directions.
