Tangy Pea and Cheese Macaroni Salad

Are you having a Memorial Day BBQ this weekend?  If so, you’ll need a great salad to feed a large group.  This Tangy Pea and Cheese Macaroni Salad is the perfect side dish for your holiday BBQ; it has a wonderful, sweet and tangy flavor that will leave your guests wanting more. 

So get out a large bowl and let’s get started.  Boil your 1 lb. of elbow macaroni in a large pot according to the package directions.

tangy pea and cheese salad 1While you are cooking the pasta, chop up your onion and dice your cheese into little cubes.
cheese-and-onion-wAfter you’re done chopping the onion and the cheese, you can mix up the dressing for the salad.  Combine condensed milk, vinegar, sugar, mayonnaise, salt, and pepper.

pea-and-cheese-salad-2-wAfter making the dressing, it’s time to combine the macaroni, onion, peas, and cheese in a separate bowl.pea-and-cheese-salad-3-wThen add dressing to the macaroni mixture.  Mix thoroughly and chill for at least 4 hours before serving.  This gives the peas time to thaw out.pea-salad-4-wThis recipe makes 10 generous servings of salad.  If you need less salad you can divide the recipe in half.  Now you can eat a delicious salad and enjoy your Memorial Day weekend.

  1. 1 lb. Elbow macaroni

  3. 2 cups frozen peas
  4. 8 oz. block of cheddar cheese cut into cubes
  5. 1 can condensed milk
  6. 1/2 cup apple cider vinegar

  10. 1/2 tsp. pepper

Creamed Corn Cornbread

 

creamed corn cornbreadHere is a traditional side dish that people often make for many holidays.  We call this dish creamed corn cornbread.  I know there are many names for it and many versions of it.  So far this is my favorite recipe for this dish.  I received this recipe during a Thanksgiving dinner a few years ago from my husband’s cousin.  After one bite of her creamed corn cornbread, I was hooked; I had to get the recipe!  This tastes so good even my husband looks forward to me making it.

Start by melting your 4 oz. stick of margarine in a bowl.creamed corn cornbreadNow mix in your 1 can of whole kernel corn, 1 can of creamed corn, 1 (8 oz.) tub of sour cream, 1 egg, and 1 box of Jiffy corn muffin mix. Mix all of the ingredients until its combined. Pour ingredients into a greased casserole pan.

Easy Cheesy Potatoes

This is a recipe that I make quite often for birthday parties and for pot lucks. It’s easy to make and it’s convenient since you mix it up the night before your event.  On the day of your party all you have to do is place the potato chips on top and bake it in the oven.

First you combine the potatoes and all of the ingredients (except the potato chips) in a bowl.mixed-ingredients

Now mix all of your ingredients (except the potato chips) and then put them in a greased 9×13 inch pan or a 3 quart casserole dish. Refrigerate overnight. Then top with your crushed plain potato chips. Bake at 350 degrees for 1 hour and 15 minutes.
