Potato Soup

potato soupThis is comfort food at its best!  Loaded with ham, bacon, cheese, and potatoes…this is a meal in a bowl. You could serve it on a big game day for a crowd or to your family on a weeknight.  I made this Potato Soup recipe last Thursday night when we had a blizzard.  It’s was the perfect food for a cold night!  I happened to have all of the ingredients in my cupboard.  This soup has the same white sauce base as my recipe for Scalloped Potatoes and Ham with more milk added to the sauce.

Start by pealing and chopping your potatoes into bite sized pieces.

potatoes for potato soupNext place the chopped potatoes in a pot and fill the pot with just enough water to cover the potatoes.  Bring the potatoes to a boil and boil them for 5 minutes.  After the potatoes have boiled, drain them and set them aside in a bowl until you are ready to add them to the soup.

potatoes in waterWhile the potatoes are boiling, you can cook the bacon in a pan or in the microwave.  When the bacon is done, you can set it aside on some paper towels for it to cool.  When the bacon is cool, you can chop it into small pieces.

bacon for potato soupNext chop up the onion and heat it up in a pan with some butter until it is cooked and tender.

onion for potato soupNow you can set the cooked potatoes, cooked bacon, and cooked onion aside and start on the soup.  Melt the butter in a pan and then pull the pan off of the heat.  Then mix in the flour to make a paste.

paste for potato soupNow add the milk and put the pan back on the heat.  Heat the mixture over medium heat until it starts to bubble, stirring constantly.  You have to stir this soup the whole time or it will scorch on the bottom of the pan.  As the soup heats up, it will thicken.  When it bubbles, turn down the heat to low.

adding cheese to potato soup Warm the soup on low until everything is heated up and until the cheese is melted.  Stirring it occasionally.  Now you are ready to serve your soup.  You can garnish each bowl with some bacon, cheese, sour cream, and chives.

Old-Fashioned Chili

Old Fashioned ChiliLooks like it’s cold outside once again, which means it’s time to cook a meal that makes you and your family feel warm and cozy.  This old-fashioned chili recipe is perfect for cold weather days.  Even though chili is perfect for cold days, it can also be a great dish for warm weather events like a picnic or a pot luck.  This chili has a great taste and a great consistency that will satisfy even some of the pickiest of eaters; the tomatoes are blended making it a meal that will prevent kids from picking out some of the healthiest parts of the dish.

First brown your hamburger and onion in a pan. When the meat is brown, stir in 1 and a 1/2 tsp. of chili powder. Then blend your 2 cans of stewed tomatoes in a blender until it’s smooth.blender-wNow in a large pot combine your browned hamburger/onion, blended tomatoes, 1 can of dark red kidney beans, 1 can of chili beans in chili sauce, and 1 cup of water.  Then cook on medium heat until it simmers. Once it simmers, add a 1 tsp. of molasses and a 1/2 tsp. of apple cider vinegar.

After the chili cooks on low for 1 hour on the stovetop, it’s time to enjoy.

  5. 1 can dark red kidney beans
  6. 1 can chili beans in chili sauce
  7. 1 cup water
  8. 1 tsp. molasses
  9. 1/2 tsp. apple cider vinegar
Instructions

Cheesy Ham and Potato Soup

 My husband’s friend gave us this delicious cheesy ham and potato recipe, and it’s a great one!  Our family needed a tasty soup for lunch and this one fit the bill.  You’re going to have trouble putting down your spoon when you taste the creamy, cheesy flavor of this soup.  The fact that it is packed with our favorite vegetables is another reason this is a new family favorite.  And with Easter dinner coming up, it will help you use up any left-over ham.  This soup would be great to serve at home, at a shower or even at a party. First peel and dice your potatoes into bite size pieces.

Now combine all of your vegetables in a large cooking pot.  Add just enough water to cover the vegetables.veggies-in-the-pan-w

Cook on the stovetop until boiling. Then lower heat and cook vegetables until they are soft. Drain water and mash half of the vegetables in the pot.mashing-veggies-w

Next add milk, half and half, Velveeta, ham, salt and pepper. Stir until Velvetta is melted and everything is mixed together. Turn down on the stovetop at the lowest setting for 1-2 hours stirring occasionally. Soup will thicken as it cooks. Then it’s time to enjoy.

  5. 1 1/2 cups skim milk
  6. 1 1/2 cups half and half

  8. 1 lb. diced ham
  9. 1/2 teaspoon salt
  10. 1/4 teaspoon pepper
Instructions

During this cold spring season, we constantly face temps going up and temps going down.  Some days we are over dressed while other days we are underdressed.  With these cool days wearing us down, it’s nice to have a simple meal that can power us back up so we feel energized and healthy again.  Here’s a recipe that will make you feel warm and cozy on these cold spring evenings.  My family calls it hamburger soup.  It’s packed with a lot of great vegetables that is sure to satisfy even the largest appetite.

Place the browned hamburger and onion along with 3 cups of water, 2 cans of diced tomatoes, and 1/4 cup minute rice in a large pot. Now pour in the vegetables. Add the shredded cabbage, diced potatoes, sliced carrots, and diced celery. Note: you can leave out any of the vegetables that you don’t like and add vegetables you do like.

Now add the seasoning, the 2 tsp salt, 1/4 tsp thyme, 1/4 tsp basil and 1 bay leaf.  Then bring the mixture to a boil.  Once it is boiling, turn it down to low and simmer for 1 hour. Then remove the bay leaf.  And that’s it!
