Simple S’mores Trail Mix

The weather has been warming up this week here in Iowa, which reminded me that soon we will be making s’mores by the campfire.  So when I was looking for a snack to make for my daughter’s sporting practice I had to try this recipe from Like Mother, Like Daughter.  It combines the perfect mix of sweet dark chocolate with some salt from the pretzels.   I filled up snack size baggies with this wonderful mix and the kids loved it.  My niece loves to assemble little miniature s’mores with all of the pieces as she snacked. So if you are looking for the taste of s’mores without the hassle of the campfire then try this fun blend of goodies.

Here are the ingredients you will need, 3 cups of Golden Graham Cereal, 2 cups of mini marshmallows,  1 cup of chocolate chips, 2 cups of pretzels, and 1 (10 oz.) package of Ghiradelli dark chocolate melting wafers.

Start by mixing the cereal, marshmallows, chocolate chips, and pretzels in a bowl.

Then spread out the mix on parchment paper.

Now melt one (10 oz.) bag of melting wafers according to the package directions in the microwave or on the stove top.  I used Ghiradelli dark chocolate, but you could use a different brand.

Then using a spoon drizzle the melted chocolate wafers over the mixture.

Now let the chocolate cool until it is set and then break it into pieces and fill your snack baggies or other containers.

Sweet and Salty Corn Chips

sweet-and-salty-corn-chipsDo you love sweet or salty snacks? Well this treat is the perfect balance of both sweet chocolatey butterscotch and super salty corn chips. I was first introduced to this interesting snack by my sister after she purchased a bag of it at a bake sale. The recipe uses the same delicious ingredients as Scotcheroo Bars minus the Rice Krispies. I was so excited to try this new concoction that I prepared it as an after school snack for my daughter and nieces. They gave it a thumbs up by quickly eating the entire platter full – no joke! It’s ooey, gooey, sticky, and fun to pick through for pieces with large globs of drizzle and some with just a little. So if you are looking for an out of the ordinary sweet snack, for a movie night or a fun summer party, try this recipe for Sweet and Salty Corn Chips.

Start by mixing the 1 cup of light corn syrup and 1 cup of sugar together in a pan over medium heat until it just starts to boil. Then remove the pan from the heat right away or the topping will be too hard.

Remove from the heat and add 1 cup of peanut butter. Stir it in until it is completely mixed together.

Now drizzle this mixture over a 18 oz. bag of corn chips that have been spread on two greased cookie sheets.

Now it is time to make the chocolate topping. Melt 1 cup of chocolate chips and 1 cup of butterscotch chips in the microwave.  Stirring the chips every 15 seconds until they are melted.

Now drizzle the chocolate on top of the corn chips. Let it cool and dry.  Then you are ready to enjoy!

  • 1 (18 oz.) bag of corn chips

Pineapple and Green Pepper Cheese Ball

cheese-ball-2We had crazy blizzard conditions in Iowa today giving me a snow day to figure out what to make for the Big Game on Sunday.  I decided to go with one of my favorite party foods, a Pineapple and Green Pepper Cheese Ball, which is the perfect snack for any get together.  When I crafted this cheese ball, it took me back to the 80’s when my mom would make this as part of the goodies she would serve for her card club.  My sister and I would happily clean up the leftovers after the party.  So if you want to add some 80’s flair to your party, make this flavorful cheese ball filled with heavenly pineapple, crisp green peppers, juicy onions, and smothered with chopped pecans.  It will make your guests cheer.

Then cover the cream cheese with the remaining pecans.

Pineapple and Green Pepper Cheese Ball

Ingredients

  • 1/2 cup finely chopped green pepper
  • 1/2 cup finely chopped onion
  • 2 (8 oz.) packages of softened cream cheese
  • 1 (8 oz.) can of crushed pineapple
  • 1 tablespoon of Lawry's Seasoned Salt
  • 2 cups of chopped pecans

Instructions

  1. Start by finely chopping the green pepper. Next finely chop the onion. Pigs in a Blanket

pigs in a blanket 1Summer is here and this is a perfect recipe for a quick lunch or dinner. My mom has been making this recipe since the 1970s when I was a little girl, and I’ve always loved them since then.  Now as a mom I enjoy making them for my family. This is definitely a kid friendly recipe to try this summer.  And don’t be afraid to have your kids help you make them.  Kids love the fact that they taste like a cross between a grilled cheese sandwich and a hot dog on a bun; two of their favorite meals. Pigs in a blanket pairs perfectly with a bowl of tomato soup.  So let’s get out the ingredients and make this easy summertime meal.

baked pigs in the blanketYou will need one package of 8 hot dogs, 8 slices of American cheese, 8 slices of bread, and enough soft butter for one side of each piece of bread.

Bake them in a 350 degree oven for 20 minutes.

Let them cool for a few minutes and serve with ketchup and your favorite soup. The kids and adults will love this quick summertime favorite.
