  • Salmon with Dill Sauce

    salmon in dill sauceLooking for a light summer recipe? This salmon recipe is easy to make and has a wonderful dill flavor that is just perfect for summer. And if you are growing an herb garden outside your back door, use your fresh dill instead of dried.

    First bake your salmon. I lined my pan with foil and then drizzled some olive oil on the salmon. Then I put salt and pepper on it. I baked my frozen salmon fillets for 25 minutes in a 375 degree oven. Make sure the fish has an internal temperature of 145 degrees when it’s done cooking.

    salmon 1Next mix your sauce in a bowl. Mix 1/2 cup of plain greek yogurt, 1/4 cup of mayonnaise, 1/4 teaspoon of garlic salt, 1 teaspoon of dried dill, 2 teaspoons of milk, and 1 teaspoon of brown sugar.

  • Peach Pie

    Peach PieSummer is here!  Or it will be tommorow.  And what’s summer without our favorite summer foods like peach pie?  The other day my sister gave me a delicious peach pie recipe that has a wonderfully flaky crust.  So, I decided to get some peaches to make my first pie of summer.  This recipe is an easy one that even a begining pie maker can succeed at.  So drop all of your fears about not knowing how to make a good pie, go out and get the ingredients for this recipe, and let’s get baking!

    First start with eight peaches.

    Peal peaches and remove the pits.pealing peach

    Slice the peaches into thin uniform slices.

    Put your sliced peaches in a bowl and add 2/3 cup of sugar.

     Add three tablespoons of flour.

    Mix in 1/2 teaspoon cinnamon.

    Mix everything together thoroughly.

    mixing peach fillingNow set the peaches aside and start mixing up your pie crust. Put two cups of flour in a bowl and a 1/4 teaspoon of salt.

     Add 1/2 cup of vegetable oil and 1/4 cup of water to the flour.

    Mix together until it looks like the dough is ready to be rolled out. You can add a little more water or oil if the dough is too crumbly.

    Roll the crust out between two pieces of waxed paper. Roll out until very thin.

    Form the dough in the bottom of a pie plate.

    Pour the peaches in the pie plate.

    Now you can make the crumble top. Mix 1/2 cup of flour with 1/2 cup of brown sugar in a bowl.

    Now cut in 1/4 cup of butter till the mixture resembles coarse crumbs.

    Sprinkle over filling. I also cut out 3 small hearts out of the extra pie crust and set them on top of the crumble and brushed them with milk and sprinkled them with brown sugar.

    Now bake the pie in a 375 degree oven for 50-60 minutes or until the pie is golden brown.

  • Bacon-Wrapped Beef Filets

     

    Bacon-Wrapped Beef FiletsHappy Father’s Day! This recipe has what every man loves: bacon! My husband loves bacon. He loves it on omelets, salads, sandwiches, quesadillas, and of course steak. So this recipe was a special Father’s Day treat. It’s an easy way to wow that special guy in your family.

    First start by preheating your oven to 400 degrees. Season both sides of your filets with salt, pepper, garlic salt, and dried thyme.

    filet 1Wrap a thin piece of bacon around the filet and secure it with toothpicks.

    filet 2Heat the butter in an oven safe pan. Use one tablespoon of butter per filet.

    butter 3Add the filets to the pan and brown them on both sides.

    filet 6Transfer the pan into the 400 degree oven. I baked my filets for 12 minutes, which resulted in filets at a medium doneness (145 degrees). If you prefer a different level of doneness, be sure to adjust the baking time and check with a meat thermometer.

    filet 7Remove steaks from the oven and loosely wrap with foil so they can rest for 5 minutes.

    filet 9Garnish each steak with fresh thyme and juices from the pan. Now you are ready to set the table and wow your dad with a wonderful Father’s Day meal.
