  • Hamburger Soup

    Hamburger soup

     

    During this cold spring season, we constantly face temps going up and temps going down.  Some days we are over dressed while other days we are underdressed.  With these cool days wearing us down, it’s nice to have a simple meal that can power us back up so we feel energized and healthy again.  Here’s a recipe that will make you feel warm and cozy on these cold spring evenings.  My family calls it hamburger soup.  It’s packed with a lot of great vegetables that is sure to satisfy even the largest appetite.  

    First brown your beef and onion in a pan. Then drain off the excess fat.hamburger-in-pan-for-web

     

    Place the browned hamburger and onion along with 3 cups of water, 2 cans of diced tomatoes, and 1/4 cup minute rice in a large pot. Now pour in the vegetables. Add the shredded cabbage, diced potatoes, sliced carrots, and diced celery. Note: you can leave out any of the vegetables that you don’t like and add vegetables you do like.

    Now add the seasoning, the 2 tsp salt, 1/4 tsp thyme, 1/4 tsp basil and 1 bay leaf.  Then bring the mixture to a boil.  Once it is boiling, turn it down to low and simmer for 1 hour. Then remove the bay leaf.  And that’s it!

  • Taco Dip

    It’s Friday!  Which means it’s the perfect time to make some taco dip to enjoy with your friends this weekend. My family has made this taco dip for over 30 years for card club, get-togethers, and other party events.  We always loved the crispy, fresh taste of vegetables with every bite. This is a delicious dip that anyone can make and enjoy.  

    First you mix the softened cream cheese, the thousand island dressing, a can of chopped green chilies, and taco seasoning.

    Next, you need to spread the mixture into a 9″x13″ pan or plate.

    After spreading the mixture, top it with lettuce, tomatoes, a 1/2 can of kindney beans (with each bean cut in half), onion, cheddar cheese and sliced black olives. Serve with tortilla chips.  And that’s it!  Now it’s time to party.

  • Oven Meatballs

    Looking for a great oven baked meatball recipe? Here is a great tasting meatball that you and your crew are going to love.  It is very easy to make and it requires only a few ingredients you probably already have in your cupboard. These meatballs are great in pasta sauce, and they are amazing when dipped or when coated in barbecue sauce.  My husband absolutely loves them in barbecue sauce!  Whether it’s for a pasta meal for the family at home or it’s for an appetizer at a friend’s party these meatballs are going to get a lot of attention while they last. 

    First combine all ingredients and mix together.

    Next shape into 4 dozen meatballs about 1 inch in diameter.  Place the meatballs on baking sheets lined with foil.

    Bake at 375 degrees for 35 minutes or until the meatballs reach 160 degrees on a meat thermometer.  Now you can remove them from the pan and serve them with your favorite sauce. This meatball freezes very well so if you have too many just freeze them for later.

  • Easy Cheesy Potatoes

    This is a recipe that I make quite often for birthday parties and for pot lucks. It’s easy to make and it’s convenient since you mix it up the night before your event.  On the day of your party all you have to do is place the potato chips on top and bake it in the oven.

    First you combine the potatoes and all of the ingredients (except the potato chips) in a bowl.mixed-ingredients

    Now mix all of your ingredients (except the potato chips) and then put them in a greased 9×13 inch pan or a 3 quart casserole dish. Refrigerate overnight. Then top with your crushed plain potato chips. Bake at 350 degrees for 1 hour and 15 minutes.
