  • Roast Chicken

    Here is a delicious roast chicken recipe!  This is a great dish to make on a weekday night since you will have left over chicken for other recipes during the week. I started making this chicken recipe with my roaster, and I love it!  It’s so easy to make and it’s a great use of that roaster you have sitting in a cupboard collecting dust.  The mix of spices gives it a savory flavor while leaving the chicken meat moist.  So let’s get that roaster out and start cooking.

    Mix your spices in a bowl: onion powder, garlic powder, paprika, ground sage, black pepper, and salt.Roasted chicken 1

    Rinse off your whole chicken, rub olive oil on it, and then rub all of the spices on the chicken.

    Place the chicken in the roaster with the breast side up.  Then add enough water to just cover the bottom of the roaster.  Now roast your chicken at 350 degrees for 2 hours or until the internal temperature reaches 165 degrees. Now it is time to enjoy your chicken.

  • One-Pan Spiral Goulash

    Here is an easy meal that the whole family will love.  This dish has a great flavor and it’s a healthy recipe.  So why would the whole family like it you ask?  It’s because for this meal I use a little trick of mine that works on my family; I blend the tomatoes to get rid of the tomato chunks.  My husband and my daughter both hate tomato chucks so I blend the tomatoes up to avoid hearing my family say: “Yucky!”  “Why are these chunks in here?” and “I’m not hungry.”  Now all I hear is, “This is awesome!”  I use this same trick for my Old Fashioned Chili and it works like a charm.  Wait a minute!  This meal gets better!  This dish is called One-Pan Spiral Goulash for a reason; it only gets one pan dirty!     

    So lets get started on this easy recipe.  In a large pan or in a pot brown your onion and 1 pound of ground beef until the meat is no longer pink.Goulash-1-wBlend your 2 cans of stewed tomatoes in the blender.

    goulash 2Stir in the blended stewed tomatoes, pasta, sugar, chili powder, salt, and garlic powder.

    Bring to a boil then reduce the heat, cover and simmer for 25-30 minutes or until the pasta is tender.  Now you can serve with cheddar cheese on top of it if you wish.  And there you have it… an easy meal for a weeknight when you don’t have a lot of time to cook.

  • Beef and Lime Smothered Burritos

    Happy Cinco de Mayo everyone!  I have a great smothered burrito recipe that would be a perfect meal idea to help you celebrate. This dish is a wonderful blend of cheeses and sauce that had my husband and I eating the leftovers for days; we loved it!  So let’s get started making this fiesta of a meal.

    First start by browning your 1 lb. of ground beef along with 1/2 of a chopped onion in a pan until the meat is brown and until the onions are tender. Season the meat with 1/4 teaspoon salt and 1/4 teaspoon pepper.

    Now add your 4.5 oz can of chopped green chiles, 1/2 cup of skim milk, 1/2 cup of shredded Monterey Jack cheese, 4 ounces of cream cheese, and 1 (10 ounce) can of mild enchilada sauce.  Make sure you stir well. Keep stirring until the cheese is melted. Cut your lime in quarters and then add a 1/4 of a lime’s juice (squeeze the lime) into the sauce and stir it.

    Now remove from the heat.  Then cover the bottom of a 9×13 baking dish you are using with a thin layer of the sauce.  Make sure you set aside 1 cup of the sauce for topping before you start filling the tortillas.  Once you have the sauce for the topping set aside, it’s time to fill each of the 6 tortillas with a 1/2 cup of sauce.  Then rollup filled tortillas and place seam side down in your baking dish.  Top the burritos with the 1 cup of sauce you set aside and with a 1/2 cup of shredded cheddar cheese.  Bake in a 350 degree oven for 30 minutes or until heated through. Now you can serve with chopped tomatoes, and garnish with cilantro if you wish.

  • Scalloped Potatoes and Ham

     

    scalloped potatoesAre you in the mood for some great comfort food?  This is a great scalloped potato recipe that my family has enjoyed for many years.  We usually make scalloped potatoes after we have had a meal that included ham as a main dish; it’s a great way for us to use up the left-over ham.  With Easter arriving soon, it is likely that you may have some extra ham left over from your Easter dinner.  If so, take that extra ham and make a great dish that I know you are going to enjoy.  

    First start by slicing 7-9 potatoes. You can use a few more or less potatoes to fill your dish.scalloped potatoes and ham

    Next chop the ham. You can use as much as you would like.  I used 1 cup.

     Now mix the ham and potatoes in a greased 8″x 8″ baking dish.

    Now it’s time to make the sauce.  First melt the butter in a pan. Then pull the butter off the heat for a minute and mix in 1/2 cup of flour and make a paste.

    Now put the paste back on the burner and add the 4 cups of skim milk, salt, and pepper. Now bring the mixture to a boil stirring constantly over medium heat. Once it starts to bubble, it’s done and it will have thickened.  Now you can pour it over your potato and ham mixture.potatoes

    Now bake it in a 350 degree oven for 1 hour.  After the hour, check to make sure that the potatoes are soft by poking them with a fork.  If it’s not done, keep cooking it longer until the potatoes are soft.  Now its time to enjoy!
