  • Apple Turnovers

    apple turnoversAre you looking for the perfect breakfast pastry? Well here it is with all of it is flaky apple deliciousness. This apple turnover is so good your kids will want to get up early to eat breakfast. Put away the Pop Tarts.  Forget about the Toaster Strudels. It’s time to get out the fresh apples and spices that will have your kids running for the dinning room table. Kids love the sweet, cinnamon goodness.  And guess what…it’s easy to make. Odds are you will have most of the ingredients in your pantry. So let’s get baking.

    Start by chopping your 2 cups of apples into small pieces.

    adding sugarThen add 1 tablespoon of flour.

    adding flourNext add 1/2 teaspoon of cinnamon.

    adding cinnamon 1/8 teaspoon of nutmeg.

    adding saltAnd 1 teaspoon of lemon juice.

    mixing applesNow open two 8 oz. packages of crescent rolls. Separate each triangle on a foil lined baking sheet and put two tablespoons of filling in the center of each crescent roll.

    closing turnoversBake in a 350 degree oven for 20 minutes.

    baked turnoversNow for the frosting… combine the margarine, milk and vanilla in a pan on the stove and heat it until the margarine is melted. You want to heat up the liquid so you will have a smoother frosting.

    powder sugarThen add the warm liquid to the powdered sugar one tablespoon at a time.

    adding liquid to powdered sugarKeep adding the warm liquid until it reaches this consistency. You may have to add a little more powdered sugar if it is too runny.

    mixed frostingNow drizzle it over the warm apple turnovers.

  • Apple Crisp

    apple crispThe beginning of Fall is the perfect time to bake apple crisp. I have an abundance of apples at my house because my mother-in-law has a small apple tree, and this year it has produced hundreds of apples. We have picked the apples over the last three weeks. So I have been making many recipes that include apples, which I will be featuring over the next week. When I am buried in hundreds of apples, the first recipe I make is apple crisp. It is easy to make and it is so sweet, warm, fruity and delicious. It has a wonderful oat topping that you can’t resist. It is perfect with a scoop of vanilla ice cream. So let’s start slicing apples and make this wonderful crisp.

    Start by peeling 1 quart of apples. 

    peeling applesSlice the apples and place them in the bottom of an 8″x8″ baking dish.

    sliced applesIn a bowl mix the spices. Add the 1 cup of brown sugar, 1/4 teaspoon nutmeg,  1 teaspoon of cinnamon, and 6 Tablespoons of flour.

    flourAdd the 3/4 cup of oatmeal to the spices.

    oatsCut in 1/2 cup of softened butter.

  • Cherry Topped Cheese Dessert


    Cherry Topped Cheese Dessert

     Who loves cheesecake, but doesn’t have the time to make a cheesecake? That describes me in a nutshell. That’s why I love the recipe for Cherry Topped Cheese Dessert. It has all of the flavor of a cheesecake with half of the work. This is a no-bake recipe so it is perfect for this part of the summer when you don’t want to heat up your kitchen. It is a light fluffy dessert with a yummy graham cracker crust.  I served this as dessert at the same garden party where I served Old-Fashioned Potato Salad and Easy Sloppy Joes. My guests loved it so much that we only had one piece of left! It is the perfect end to any meal. So let’s get our graham crackers out and get started.

     First we start by making our graham cracker crust. Put 14 full graham crackers in a bag (half of a box of graham crackers) and close the bag tightly. Now roll your rolling pin over it so that the graham crackers are fully crushed.

    crushing graham crackersOnce they are crushed, you can put them in a bowl and mix them with 1/4 cup of sugar and 1/2 cup of melted butter.

    After they are mixed, spread them in the bottom of a 9 x 13 cake pan. Now put the cake pan in the freezer for at least 4 hours to allow it time to set.

     After the crust is set, you can start mixing up the filling. Make sure you thaw the Cool Whip in the refrigerator for at least 4 hours before you begin the recipe. If you don’t have the Cool Whip thawed out ahead of time, you won’t be able to make this dessert. The next thing you need to do is make sure your cream cheese is softened. Set it on the counter for 30 minutes so it will be easy to mix.

    mixing in cool whipNow you can get your graham cracker crust out of the freezer and layer the cool whip mixture on top.

    spreading whip mixtureThen take your cherry pie filling and layer it on top of the cool whip.

    spreading cherries on dessertNow you can put the dessert in the refrigerator for at least 3 hours to let it set up. And that’s it!  You have an easy dessert that tastes like cheese cake and you didn’t have to slave away in the kitchen for hours; however, you can always pretend that you did. Enjoy!

  • Scotcheroos


    scotcheroos finalThis is a bar that everyone loves, either for the peanuty middle, the super sweet topping, or the nice crispy crunch, it’s got something for anyone, anytime! In fact…I just ate one for breakfast! My sister and my mom make scotheroos all of the time, to take to parties or just to have around the house. So, just follow these super easy steps, and we can get cooking and make this classic favorite. You will need sugar, Karo corn syrup, creamy peanut butter, Rice Krispies, chocolate chips, and butterscotch chips.

    Scotcharoos 1Start by mixing the sugar and Karo corn syrup together in a pan over medium heat until it just starts to boil. Remove from the heat right away or the bars will be too hard when they cool.

    scotcharoos 4Remove from the heat and add the 1 cup of peanut butter. Stir it in until completely mixed.

    scotcharoos 6 Stir in the 6 cups of Rice Krispies.

    scotcharoos 7Spread out in a 9 x 13 cake pan. Pat butter on the back of a metal spoon to make spreading easier.

    scotcharoos 9Now it is time to make the topping. Melt 1 cup of chocolate chips and 1 cup of butterscotch chips in the microwave. Stirring chips every 15 seconds until chips are melted. You can also melt the chips in a double boiler on the stove top on low heat.

    scotcharoos 5Pour the melted chip topping on the Rice Krispie bars in the pan and spread with a knife or spoon.

    You can let them set until they cool and the topping sets up. Now you can share with friends and you will always want to make this bar for special events.
