  • Roundup Beans


    roundup-beans-wHere’s a side dish that is perfect for any potluck or BBQ event.  My mom has been making this Roundup Beans recipe for many years; it’s a family favorite!  This recipe takes baked beans to another level by adding ground beef and a delicious mix of beans.  Try this at your next grill out and you will not be disappointed!

    Brown your ground beef and season it with salt and pepper.  Then drain off the excess grease.hamburgerIn a casserole dish mix up the ground beef, drained kidney beans, drained butter beans, and 2 cans of pork and beans.  Then add in a 1/2 cup of ketchup.ketchup in beansAdd in a 1/2 teaspoon of ground mustard.

    brown-sugar-wThen bake in a 350 degree oven for 1 hour.  Now you can share this wonderful side dish with your family and friends.

  • Butterscotch and Chocolate Chip Cookies

    butterscotch-and-chocolate-chip-cookies-wHere’s a delicious cookie that combines two of my favorite things: butterscotch + chocolate = Awesome!  It has a super sweet flavor that you can’t resist.  This cookie is yummy and it’s easy to make, so lets get started. Note: this cookie really is awesome, so if you don’t want to eat a bunch of them, you need to have a plan to share them with your friends and neighbors.

    Mix together two sticks of softened margarine, 1 cup granulated sugar, and 1/2 cup brown sugar. Cream them together until they have a light fluffy texture.

    butterscotch-2-w In a bowl mix the 1 teaspoon of baking soda into two tablespoons of warm water.  Now stir that mixture in with the margarine & sugar mixture.  Once you have combined the two mixtures together, add the 2 1/2 cups of flour to the mixture slowly.

    butterscotch 3Add in the 1/2 teaspoon of salt.  Then fold in the 1/2 cup of butterscotch chips and the 1/2 cup of chocolate chips. Fold the chips in with a spoon not the mixer.

    Drop small spoonfuls of cookie dough on a greased cookie sheet.butterscotch 5

    Bake in a 350 degree oven for 10 to 12 minutes.

    Now here’s a little trick to guarantee that the cookies have picture perfect chips on them: when the cookies come out of the oven, while they are still warm, place some butterscotch chips and chocolate chips on top of them.  Now sit back and enjoy a cookie with some cold milk.

  • Tin Foil Packet Meals

     

    Tin-Foil-Packet-Meals-wHere is a great meal idea that will make you feel like you are camping at home this Memorial Day. This is an easy weeknight meal that allows each person to customize what they want in their foil packet.  My daughter had fun filling her foil packet with just meat and potatoes. These are great at home and they are great for camping.  Give this meal idea a shot; I know you’re going to love it.

    First you need to take your pound of ground beef and cut it into 4 equal pieces.  Then form the 4 pieces into patties.  Sprinkle a little salt and pepper on each patty.

    Now slice up your onion, put your baby carrots in a bowl, and cut up your potatoes.  I like to put them in a platter together so everyone can pick out what they would like buffet style.

    tin-foil-packet-2-wPlace what you want in each foil square and then put some salt and pepper on everything.

    tin foil packet meals 5Now do this with all four packets and then place them on a cookie sheet.

    foil-packets-on-pans-wCook in a 350 degree oven for 45 minutes or until the hamburger reaches an internal temperature of 160 degrees and the potatoes and carrots are soft.  Now enjoy that indoor camping feeling or actually take some outside to the campground with you.  Happy Memorial Day!

  • Tangy Pea and Cheese Macaroni Salad

    Are you having a Memorial Day BBQ this weekend?  If so, you’ll need a great salad to feed a large group.  This Tangy Pea and Cheese Macaroni Salad is the perfect side dish for your holiday BBQ; it has a wonderful, sweet and tangy flavor that will leave your guests wanting more. 

    So get out a large bowl and let’s get started.  Boil your 1 lb. of elbow macaroni in a large pot according to the package directions.

    tangy pea and cheese salad 1While you are cooking the pasta, chop up your onion and dice your cheese into little cubes.
    cheese-and-onion-wAfter you’re done chopping the onion and the cheese, you can mix up the dressing for the salad.  Combine condensed milk, vinegar, sugar, mayonnaise, salt, and pepper.

    pea-and-cheese-salad-2-wAfter making the dressing, it’s time to combine the macaroni, onion, peas, and cheese in a separate bowl.pea-and-cheese-salad-3-wThen add dressing to the macaroni mixture.  Mix thoroughly and chill for at least 4 hours before serving.  This gives the peas time to thaw out.pea-salad-4-wThis recipe makes 10 generous servings of salad.  If you need less salad you can divide the recipe in half.  Now you can eat a delicious salad and enjoy your Memorial Day weekend.
