  • Oven Meatballs

    Looking for a great oven baked meatball recipe? Here is a great tasting meatball that you and your crew are going to love.  It is very easy to make and it requires only a few ingredients you probably already have in your cupboard. These meatballs are great in pasta sauce, and they are amazing when dipped or when coated in barbecue sauce.  My husband absolutely loves them in barbecue sauce!  Whether it’s for a pasta meal for the family at home or it’s for an appetizer at a friend’s party these meatballs are going to get a lot of attention while they last. 

    First combine all ingredients and mix together.

    Next shape into 4 dozen meatballs about 1 inch in diameter.  Place the meatballs on baking sheets lined with foil.

    Bake at 375 degrees for 35 minutes or until the meatballs reach 160 degrees on a meat thermometer.  Now you can remove them from the pan and serve them with your favorite sauce. This meatball freezes very well so if you have too many just freeze them for later.

  • Easy Cheesy Potatoes

    This is a recipe that I make quite often for birthday parties and for pot lucks. It’s easy to make and it’s convenient since you mix it up the night before your event.  On the day of your party all you have to do is place the potato chips on top and bake it in the oven.

    First you combine the potatoes and all of the ingredients (except the potato chips) in a bowl.mixed-ingredients

    Now mix all of your ingredients (except the potato chips) and then put them in a greased 9×13 inch pan or a 3 quart casserole dish. Refrigerate overnight. Then top with your crushed plain potato chips. Bake at 350 degrees for 1 hour and 15 minutes.

  • Beef and Onion Sliders

    Here’s an easy main dish or appetizer for a party. A couple of years ago I served these sliders at a garden party. Everyone loved them!  The onions in the sliders deliver a ton of flavor!  A few of the guys at the party couldn’t stop eating them.  One of the guys even left with one or two sliders in their hands.  This is a great dish for a large group; all you have to do is bake them in the oven. The beef and onion sliders are a definite crowd pleaser.  

    You start by covering the bottom of a 8×8 baking dish with 1/4 cup dry minced onions.onions-web

    Then put 1 pound of ground beef on top of the onions. Pat it down so it is an even layer. Next, season with salt and pepper or with your favorite seasoning.

    Bake the pan in a preheated 400 degree oven for 35 min. After the 35 min, make sure the meat temps at 160 degrees. Next, cut up the meat into 12 equal pieces and put them on the buns. I used King’s Hawaiian Rolls, but you can use any cocktail roll that you have.  Now you can add cheese or your favorite toppings and serve.

  • Chocolate Mint Cookies

    Just in time for St. Patrick’s Day!  Here is a cookie that combines the taste of a brownie with the wonderful flavor of Andes Mints. This would be a great treat that you can take to work on Monday to celebrate St. Patrick’s Day.  Get ready for compliments!  These are delicious. 

    First melt your chocolate and butter in a saucepan over low heat.pan

    Then remove from the heat and mix in 2 cups of sugar and vanilla.  Beat in eggs one at a time.  Then in a different bowl mix together the dry ingredients, flour, baking powder and salt. Stir dry ingredients into the chocolate mixture pan. Now chill the dough in the refrigerator for 3 hours.

    After 3 hours, preheat the oven to 350 degrees and grease your cookie sheets.  Place 3/4 of a cup of white sugar in a bowl. Roll dough into 1 inch balls. Roll dough balls in white sugar to coat. Arrange 3 inches apart on the prepared cookie sheets.

    Bake 12 to 15 minutes in the preheated oven. The cookies will be soft when removed from the oven.  Now place 1/2 of an Andes Mint in the center of each cookie. The mint will melt a little in the center. Transfer to a rack to cool.  Happy St. Patrick’s Day eating!chocolate mint cookie
