  • Apple Pie Bars

    This year the apple tree at my mother-in-laws house had a bumper crop of apples on it. We were amazed by how many apples this one tree produced. On a sunny Saturday afternoon in September we picked over 400 apples, which left me looking for a great recipe to use up my bags of apples.

    After a few days of thinking about what I wanted to bake, I decided to make apple pie bars with a crumble top.  I started experimenting with different ideas for the recipe, and I had plenty of apples to test it out.  To help me clean up some of the extra food from my experiments, I had to take on a new helper/recipe tester at Cooking Up Cottage.  He’s exceptional at cleaning up dirty plates and cleaning up any food that may fall on the floor.  His name is Butterscotch.  You can tell from the picture below he’s a big fan of my cooking.  If you have a bunch of apples and you want to make something great, try this delicious apple pie bar recipe. It will feed a crowd of people, and it will amaze anybody who loves apple pies. Start by peeling and slicing 12 medium apples.  Now add 1 1/3 cup of sugar, 1/4 cup of flour, and 1 teaspoon of cinnamon to the apples.

     Now remove the two pie crusts from the box and stack the crusts on top of each other.  Then roll out to fit a 10 in x 15 in jelly roll pan.Now fit the crust into the 10 in x 15 in jelly roll pan and crimp the edge of the crust.

    Pour the apple mixture into the crust.

    Now mix the crumble topping in a bowl.  Mix 1/2 cup of softened butter with 3/4 cup of flour, 1/2 teaspoon of cinnamon and 1 cup of brown sugar.

    Pour the topping on the apples.

    Bake the bars in a 375 degree oven for 50-60 minutes or until the pie is golden brown. Store the leftover bars in the refrigerator.  Now you are ready to enjoy this wonderful bar this holiday season.

  • Chocolate Chip Caramel Apple Dip

Halloween is all about great costumes and delicious treats.  One of the treats I like to enjoy every year is a caramel apple, and today happens to be National Caramel Apple Day.  So this is the perfect recipe to celebrate both holidays.  Caramel apples are always amazing in the fall, and I have the perfect dip that will satisfy anybody’s apple cravings.  My Chocolate Chip Caramel Apple Dip is so simple to make yet it looks so elegant it will impress your guests.  This dip is the perfect indulgent snack for any occasion like a football party, entertaining some friends and family, or even for a midnight  snack.  Either way it is sure to be a crowd pleaser for everyone.  It features a block of cream cheese smothered in delectable caramel sauce and topped with heavenly chocolate chips. 

    apple dip 2The ingredients you will need are apples, 1/4 cup of caramel flavored topping, 1 (8 oz.) block of cream cheese, and miniature chocolate chips.

    Start by slicing your apples and dipping them in lemon juice to preserve their color.

    applesThen get out the block of cream cheese and set it in the middle of a platter.  Then pour the 1/4 cup of caramel sauce over the cream cheese.

    You can drizzle the whole platter with more caramel sauce.  Now you can impress your guests with this easy appetizer.

  • Apple Turnovers

    apple turnoversAre you looking for the perfect breakfast pastry? Well here it is with all of it is flaky apple deliciousness. This apple turnover is so good your kids will want to get up early to eat breakfast. Put away the Pop Tarts.  Forget about the Toaster Strudels. It’s time to get out the fresh apples and spices that will have your kids running for the dinning room table. Kids love the sweet, cinnamon goodness.  And guess what…it’s easy to make. Odds are you will have most of the ingredients in your pantry. So let’s get baking.

    Start by chopping your 2 cups of apples into small pieces.

    adding sugarThen add 1 tablespoon of flour.

    adding flourNext add 1/2 teaspoon of cinnamon.

    adding cinnamon 1/8 teaspoon of nutmeg.

    adding saltAnd 1 teaspoon of lemon juice.

    mixing applesNow open two 8 oz. packages of crescent rolls. Separate each triangle on a foil lined baking sheet and put two tablespoons of filling in the center of each crescent roll.

    closing turnoversBake in a 350 degree oven for 20 minutes.

    baked turnoversNow for the frosting… combine the margarine, milk and vanilla in a pan on the stove and heat it until the margarine is melted. You want to heat up the liquid so you will have a smoother frosting.

    melting butter for frostingIn a bowl place 2 cups of powdered sugar.

    powder sugarThen add the warm liquid to the powdered sugar one tablespoon at a time.

    adding liquid to powdered sugarKeep adding the warm liquid until it reaches this consistency. You may have to add a little more powdered sugar if it is too runny.

    mixed frostingNow drizzle it over the warm apple turnovers.

    frosting turnoversNow they are ready to serve. Enjoy them for breakfast or with some ice cream as a dessert.

  • Apple Crisp

    apple crispThe beginning of Fall is the perfect time to bake apple crisp. I have an abundance of apples at my house because my mother-in-law has a small apple tree, and this year it has produced hundreds of apples. We have picked the apples over the last three weeks. So I have been making many recipes that include apples, which I will be featuring over the next week. When I am buried in hundreds of apples, the first recipe I make is apple crisp. It is easy to make and it is so sweet, warm, fruity and delicious. It has a wonderful oat topping that you can’t resist. It is perfect with a scoop of vanilla ice cream. So let’s start slicing apples and make this wonderful crisp.

    Start by peeling 1 quart of apples. 

    peeling applesSlice the apples and place them in the bottom of an 8″x8″ baking dish.

    sliced applesIn a bowl mix the spices. Add the 1 cup of brown sugar, 1/4 teaspoon nutmeg,  1 teaspoon of cinnamon, and 6 Tablespoons of flour.

    flourAdd the 3/4 cup of oatmeal to the spices.

    oatsCut in 1/2 cup of softened butter.
