Chocolate Chip Caramel Apple Dip

Halloween is all about great costumes and delicious treats.  One of the treats I like to enjoy every year is a caramel apple, and today happens to be National Caramel Apple Day.  So this is the perfect recipe to celebrate both holidays.  Caramel apples are always amazing in the fall, and I have the perfect dip that will satisfy anybody’s apple cravings.  My Chocolate Chip Caramel Apple Dip is so simple to make yet it looks so elegant it will impress your guests.  This dip is the perfect indulgent snack for any occasion like a football party, entertaining some friends and family, or even for a midnight  snack.  Either way it is sure to be a crowd pleaser for everyone.  It features a block of cream cheese smothered in delectable caramel sauce and topped with heavenly chocolate chips. 

apple dip 2The ingredients you will need are apples, 1/4 cup of caramel flavored topping, 1 (8 oz.) block of cream cheese, and miniature chocolate chips.

Start by slicing your apples and dipping them in lemon juice to preserve their color.

applesThen get out the block of cream cheese and set it in the middle of a platter.  Then pour the 1/4 cup of caramel sauce over the cream cheese.

You can drizzle the whole platter with more caramel sauce.  Now you can impress your guests with this easy appetizer.

Ingredients

  • Apples (enough to fill your platter, I used 5 apples)
  • 1/2 cup of lemon juice to dip apples in to preserve their color
  • 1 (8 oz.) package of cream cheese
  • 1/4 cup of caramel flavored topping

Banana Muffins with Streusel Topping

Banana Muffins 1If you’re like me, every week you buy bananas and by the end of the week you see this on your counter…..

brown bananasLast year I was complaining about this same issue when I made Banana Bars.  So this is an ongoing problem at my house.  But when you have a recipe this good it’s not really a problem.   This muffin is so moist and light with just the right amount of crumb topping to complement the banana taste.  You will find yourself letting a few bananas brown just to make this recipe.

Banana Muffins 3And with Easter quickly approaching you may want to make this muffin for your Easter brunch.  So let’s embrace the brown bananas and get started on this wonderful muffin recipe. 

Banana Muffins 2Start by preheating your oven to 350 degrees. Then mix the 3/4 cup of flour, 1/2 teaspoon of baking soda, 1/2 teaspoon of baking powder, and 1/4 teaspoon of salt in a bowl.

smashed bananaThen in a bowl mix the 2 smashed bananas, 1/2 cup of sugar, 1 egg, and 3 tablespoons of melted butter.

adding sugarSlowly mix the banana mixture into the flour mixture stirring until everything is combined.

mixing in flourSpoon the batter into a greased muffin pan equally.  This recipe makes 6 full-sized muffins.

batter in panNow you need to make the streusel topping.  Start by combining 1 tablespoon of flour, 1/4 teaspoon of cinnamon, and 3 tablespoons of brown sugar.  Then cut in 1 tablespoon of slightly softened butter.

Crock-Pot Pulled Pork

crock pot pulled pork 2Today is the first day of Fall, which means it’s time to get out that old crock-pot that has been collecting dust all summer and start making all of the comfort food you can crank out of that little appliance.  This is an easy pulled pork recipe with a chili powder rub that gives the pork a savory flavor. I like to serve it on corn tortillas with cheese and all of the fixings. So let’s get started making some Crock-Pot Pulled Pork to welcome in the fall season. 

Start by chopping your half of an onion in slices.

spices for porkPlace your pork shoulder in the crock-pot and add the 1 cup of chicken stock and then rub the seasoning over the pork.

onionin crockpotCook the pork in the crock-pot for 6-8 hours on high. When it is done, it will pull apart easily. Take two forks and shred the meat.

pulled pork in the crockpotIf you are serving the pork on corn tortillas, like I did, you can heat them in a pan for 10-15 seconds over medium heat.

tortilliaThen top them with a generous amount of cheese, tomatoes, lettuce, and even jalapeƱos if you want a little heat. Of course you can always serve the pulled pork in buns with BBQ sauce or just eat the meat on your plate plain. Now you have a pulled pork recipe to enjoy with your family and friends this fall.

  1. 3-3.5 pound boneless pork shoulder
  2. 1/2 onion
  3. 1 cup chicken stock
  4. 1 tablespoon chili powder
  5. 1 tablespoon brown sugar
  6. 1/2 teaspoon cumin

Instructions

Cucumber and Onion Salad

cucumber and onion saladThis is one of my favorite recipes of the summer! It is the perfect way to enjoy the fresh cucumbers that are abundant this time of year.  It is one of my dad’s favorites; he prepares it every summer. It has a sweet and tangy flavor like Tangy Pea and Macaroni Salad and Old-Fashioned Potato Salad. And did I mention…this recipe is super easy to make. So let’s get started.

First you need 5 cucumbers.

pealing cucumbersCut the cucumbers into thin slices. The thinner the slices the more of the flavor they will absorb while sitting in the dressing.

Now mix everything until it is all combined.  Then put it in the refrigerator for at least 4 hours to let the flavors combine and absorb into the cucumbers. Now you have the perfect addition to your next meal or you have a delicious, refreshing snack.
