Bacon-Wrapped Beef FiletsHappy Father’s Day! This recipe has what every man loves: bacon! My husband loves bacon. He loves it on omelets, salads, sandwiches, quesadillas, and of course steak. So this recipe was a special Father’s Day treat. It’s an easy way to wow that special guy in your family.

First start by preheating your oven to 400 degrees. Season both sides of your filets with salt, pepper, garlic salt, and dried thyme.

filet 1Wrap a thin piece of bacon around the filet and secure it with toothpicks.

filet 2Heat the butter in an oven safe pan. Use one tablespoon of butter per filet.

butter 3Add the filets to the pan and brown them on both sides.

filet 6Transfer the pan into the 400 degree oven. I baked my filets for 12 minutes, which resulted in filets at a medium doneness (145 degrees). If you prefer a different level of doneness, be sure to adjust the baking time and check with a meat thermometer.

filet 7Remove steaks from the oven and loosely wrap with foil so they can rest for 5 minutes.

filet 9Garnish each steak with fresh thyme and juices from the pan. Now you are ready to set the table and wow your dad with a wonderful Father’s Day meal.

  3. Salt (enough to sprinkle on each filet)
  4. Pepper (enough to sprinkle on each filet)
  5. Garlic salt (enough to sprinkle on each filet)

BBQ Country Style Ribs

BBQ Country Style ribs wThis BBQ Country Style Rib recipe is baked in the oven, not on the grill, so you are set rain or shine. My husband loves the tangy, honey sauce on the BBQ ribs and is always thrilled to see them on the menu. These are outstanding leftover! I recommend making a double batch to enjoy the locked-in flavor and juiciness the second day! 

Here are the ingredients you will need: brown sugar, ketchup, worcestershire sauce, pepper, salt, garlic salt, spicy brown mustard, honey and boneless country style ribs.

sauceNow line a baking dish with tin foil and place your boneless country style ribs in the dish.  Sprinkle salt on the ribs.  Then pour the homemade sauce over the ribs.  Note: If you don’t have time to mix up your own sauce, you can use bottled BBQ sauce instead.

Tin Foil Packet Meals

 

Tin-Foil-Packet-Meals-wHere is a great meal idea that will make you feel like you are camping at home this Memorial Day. This is an easy weeknight meal that allows each person to customize what they want in their foil packet.  My daughter had fun filling her foil packet with just meat and potatoes. These are great at home and they are great for camping.  Give this meal idea a shot; I know you’re going to love it.

First you need to take your pound of ground beef and cut it into 4 equal pieces.  Then form the 4 pieces into patties.  Sprinkle a little salt and pepper on each patty.

Now slice up your onion, put your baby carrots in a bowl, and cut up your potatoes.  I like to put them in a platter together so everyone can pick out what they would like buffet style.

Dill Chicken Salad

So you made the Roast Chicken recipe and now you have chicken leftover. I’ve got a great way to use it up:  yummy Dill Chicken Salad. It’s easy to make and only requires 5 ingredients that you may already have in your pantry. Let’s get started!

First chop up 2 cups of cooked chicken.

Add 1/2 cup of mayonnaise.

Then one tablespoon of brown sugar.

Pour on one tablespoon of lemon juice.

Mix in 1 teaspoon of dill weed and 1/4 teaspoon salt.

Now you can spread the Dill Chicken Salad on your favorite bread or crackers.

Top it with lettuce if you would like.

You could stir in any of your favorite chicken salad additions like grapes, almonds, raisins, celery, onions, or eggs. I like my chicken salad without any extras. Now, it’s time to enjoy your sandwich!
